  • 1 lb ground chicken
  • 1 egg
  • 1/2 of a Granny Smith apple, diced
  • 2 large sweet potatoes
  • 1 tb olive oil
  • 2 oz cheddar cheese, freshly grated
  • 1/2 c fine breadcrumbs
  • 1/4 cup parsley, chopped
  • 1/4 cup walnuts, finely diced
  • 1 tsp soy sauce
  • 1 inch piece of ginger, grated
  • 1 Tsp salt
  • Freshly cracked black pepper and cayenne to taste
  • 2 Tb butter
  • 2 Tb maple syrup
  • 1/2 tsp each: cinnamon, coriander, cumin, and nutmeg

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bake sweet potatoes on a baking sheet for 60-75 minutes until tender.
  3. In a sauté pan, heat olive oil and sauté diced onion and apple until softened; let cool.
  4. In a mixing bowl, combine ground chicken, egg, breadcrumbs, cheddar cheese, parsley, walnuts, ginger, salt, pepper, cayenne and cooled onion/apple mixture; mix well.
  5. Form into 14-16 meatballs and place on a greased baking sheet; bake for 15 minutes or until golden brown.
  6. Peel baked sweet potatoes and mash with butter, maple syrup, and spices until smooth.
