  • ½ teaspoon ground nutmeg (optional)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup packed light brown sugar
  • ¼ cup granulated sugar
  • ½ cup unsalted butter (room temperature)
  • ¼ cup sour cream (or Greek yogurt) (room temperature)
  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup milk (room temperature)
  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. In a medium bowl, mix together ¾ cup flour, ¼ cup brown sugar, 2 tablespoons granulated sugar, and 1 teaspoon cinnamon. Stir in 4 tablespoons melted butter until crumbly.
  3. In another bowl, whisk together 2 cups flour, 1½ teaspoons baking powder, ½ teaspoon salt, and 1 tablespoon cinnamon.
  4. In a large bowl, beat together ½ cup brown sugar and ¼ cup room temperature butter until fluffy. Mix in eggs, sour cream, and vanilla.
  5. Combine flour mixture into the wet ingredients alternately with milk until just mixed; fold in diced apples.
  6. Divide the batter among muffin cups and top generously with crumble mixture.
  7. Bake for about 20 minutes or until a toothpick comes out clean. Let cool before serving.
