  • 2 large baking potatoes
  • 200g block of feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 head of garlic
  • 1 lemon, quartered
  • Honey for drizzling

Instructions

  1. Preheat oven to 200C (390F).
  2. Wash and cube the potatoes; par-boil in water for 6–8 minutes. Drain and let steam dry.
  3. In a baking dish, combine the potatoes with olive oil, thyme, oregano, salt, and pepper. Stir to coat evenly.
  4. Roast for 30–40 minutes until golden brown.
  5. Add feta to the center of the tray and squeeze half a lemon over it. Return to the oven for another 15 minutes.
  6. Prepare garlic paste from roasted garlic and mix it back into the potatoes along with remaining lemon juice and fresh basil.
  7. Drizzle honey on top before serving.
