  • 2 cups beef broth

  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon brown sugar
  • 1/4 teaspoon black pepper
  • ½ teaspoon EACH: salt, garlic powder, onion powder, chili powder, paprika
  • ¼ cup dry red apple vinegar (optional)
  • 2 tablespoons butter
  • ¼ teaspoon EACH: dried thyme, dried rosemary
  • 3 tablespoons corn starch + 1/4 cup cold water

Instructions

  1. Cut sirloin into 1-inch cubes and season with spices and flour.
  2. Heat olive oil in a large skillet over medium-high heat; brown the beef in batches.
  3. Deglaze the pan with apple vinegar, scraping up browned bits.
  4. Cook onions until softened; add garlic for an additional minute.
  5. Combine remaining gravy ingredients and bring to a boil.
  6. Thicken the gravy with cornstarch mixed with cold water.
  7. Add browned beef back into the skillet; simmer until cooked through.
  8. Finish with cold butter for a velvety texture.
