  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2/3 cup cold butter (cubed)
  • 1/3 cup light brown sugar
  • 1/3 cup granulated sugar
  • 4 eggs
  • 8 oz. cream cheese (softened)
  • 8 oz. mascarpone cheese
  • 1 and 2/3 cups fresh blueberries

Instructions

  1. Preheat your oven to 350°F. Line a 9-inch springform pan with parchment paper and grease it.
  2. In a bowl, mix flour, baking powder, salt, brown sugar, and granulated sugar.
  3. Add cold butter to the mixture and combine until crumbly.
  4. Mix in eggs and vanilla until combined; press two-thirds of this mixture into the prepared pan.
  5. In another bowl, mix cream cheese, mascarpone, sugar, corn starch, and eggs until smooth.
  6. Layer half of the cheesecake filling in the crust followed by half of the blueberries; top with remaining filling and blueberries.
  7. Bake for 65–75 minutes until golden brown; let cool before serving.
