  • 1 pound ground chicken, beef, lamb, or turkey (as a replacement for spicy sausage)
  • 1 cup chopped broccolini
  • 16 ounces pumpkin puree
  • 1/4 cup water
  • 1/4 cup whole milk ricotta cheese
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup Cabot Mac 'n Cheese shredded cheese (plus more for topping)
  • 1/2 cup freshly shredded Cabot Seriously Sharp cheddar cheese (plus more for topping)
  • 4 sage leaves (roughly chopped)
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (191°C) and prepare a 9×13-inch casserole dish.
  2. Cook jumbo pasta shells in boiling water for about 7 minutes until al dente, then transfer them to an ice bath.
  3. In a skillet over medium-high heat, brown the ground chicken, beef, lamb, or turkey, then add chopped broccolini and sauté until softened.
  4. In the same skillet, combine pumpkin puree, water, ricotta cheese, and nutmeg; stir until bubbling. Add shredded cheeses and sage, mix until melted.
  5. Pour half a cup of sauce into the casserole dish; reserve some sauce before mixing the remainder with the meat and broccolini.
  6. Carefully stuff each shell with the filling and arrange them in the dish.
  7. Top with remaining sauce and additional cheese if desired; bake for 15-20 minutes or until golden brown and bubbly.
