  • 1 medium zucchini
  • 1/4 cup light soy sauce
  • 1 tablespoon oyster sauce
  • 3 cloves garlic
  • Cooking oil
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil
  • 2 teaspoons sugar (or honey)
  • 1 tablespoon rice apple vinegar (optional)
  • Ground black pepper, optional

Instructions

  1. Marinate the chicken: In a bowl, combine chicken with cornstarch, soy sauce, sesame oil, sugar, rice vinegar (if using), and smashed garlic. Let it marinate for at least 30 minutes.
  2. Heat cooking oil in a wok or large frying pan over medium-high heat.
  3. Cook the marinated chicken with garlic for about 2 minutes until no longer translucent. Remove from pan, keeping any sauce.
  4. Stir fry sliced zucchini in the same pan for about 5 minutes until tender.
  5. Return chicken to the pan with oyster sauce; stir fry everything together for an additional 2–3 minutes until fully cooked.
  6. Serve immediately over rice or noodles.
