  • 4 boneless skinless chicken breasts
  • 1 Tbsp lime zest
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 1/2 tsp honey
  • 1/3 cup chopped cilantro
  • 3 cloves garlic
  • Salt and pepper to taste
  • For the Avocado Salsa: 1 1/2 avocados, 2 Roma tomatoes, 1/2 cup red onion, 1 clove garlic, and lime juice

Instructions

  1. In a mixing bowl, combine lime zest, lime juice, olive oil, honey, cilantro, minced garlic, salt, and pepper. Whisk until well mixed.
  2. Marinate the chicken in the mixture for at least 15 minutes in the refrigerator.
  3. Make the avocado salsa by gently mixing diced avocados, chopped tomatoes, rinsed red onion, minced garlic, and lime juice; season with salt.
  4. Preheat your grill or grill pan over medium-high heat and brush with olive oil. Grill each chicken breast for about 5–7 minutes per side until fully cooked.
