  • 1/4 cup packed light brown sugar
  • 1/2 tsp ground cinnamon
  • 1/2 cup melted unsalted brown butter
  • 2 large eggs
  • 1 tbsp pure vanilla extract
  • 1 1/2 cups cake flour
  • 1 1/2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp kosher salt
  • 1/2 cup apple cider reduction
  • 4 oz cream cheese, at room temperature
  • 1 cup unsalted brown butter, softened
  • 3 1/2 cups powdered sugar
  • 2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 2 tbsp apple cider reduction (plus extra if desired)
  • Apple slices
  • Cinnamon sticks

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. In a saucepan, melt unsalted butter over medium heat. Add diced apples, light brown sugar, ground cinnamon, and apple cider reduction. Cook until apples are tender.
  3. In a mixing bowl, combine melted brown butter, sugars, eggs, and vanilla extract; whisk until smooth.
  4. In another bowl, mix cake flour, baking powder, ground cinnamon, nutmeg, and salt.
  5. Gradually add dry ingredients to wet ingredients; fold in cooked apples.
  6. Pour batter into muffin tins and bake for 20-25 minutes or until toothpick inserted comes out clean.
  7. While cooling, prepare frosting by beating cream cheese and softened brown butter; gradually add powdered sugar and flavorings.
  8. Once cooled, frost cupcakes and garnish with apple slices and cinnamon sticks.
