  • 200ml coconut milk
  • 200ml heavy cream
  • 80g powdered sugar (for mousse)
  • 80g mascarpone
  • 140g softened butter (for shortbread)
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • Vegan gelling agent (as per package instructions)
  • Gooey cocoa spread

Instructions

  1. For the mousse, whip heavy cream and mascarpone with powdered sugar until soft peaks form. Chill.
  2. Soak vegan gelling agent as directed; heat coconut milk to dissolve it. Fold into chilled whipped cream.
  3. Pour mousse into hemisphere molds with a layer of gooey cocoa spread in between; freeze for at least 6 hours.
  4. Prepare cocoa shortbread by mixing ingredients into a dough, chilling, rolling out, cutting circles, and baking at 180°C for about 10 minutes.
  5. Assemble by placing chilled domes on cooled shortbread bases and garnish with grated coconut before serving.
