  • 2 cups granulated sugar
  • 2 teaspoons pure vanilla extract
  • 3 ½ cups cake flour
  • 1 tablespoon baking powder
  • ¼ teaspoon kosher salt
  • 1 cup whole milk
  • ¾ cup chopped Oreo cookies
  • 1.5 quarts Cookies and Cream ice cream, softened
  • 2 cups whipped cream for topping
  • Additional chopped Oreo cookies for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, cream together butter and sugar until fluffy. Add vanilla extract.
  3. In another bowl, combine flour, baking powder, and salt; gradually mix into the wet ingredients alternating with milk.
  4. Fold in chopped Oreo cookies until well distributed.
  5. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Cool cakes before layering one on a serving plate, spreading softened ice cream evenly over it, then topping with the second layer and frosting with whipped cream. Garnish with more Oreo cookies.
  7. Freeze for at least 4 hours before serving.
