  • 2 ½ pounds zucchini
  • ¾ cup extra virgin olive oil
  • 1 cup sweet onion (diced)
  • 1 ½ tablespoons fresh garlic (minced)
  • 1 cup heavy cream
  • ¾ cup Romano cheese (grated)
  • Fresh basil, oregano, and mint (for flavor)

Instructions

  1. Cook pasta according to package directions; reserve one cup of pasta water before draining.
  2. Cut zucchini in half lengthwise; shred using a box grater or food processor.
  3. In a large skillet over medium-high heat, add olive oil and sauté diced onion until softened.
  4. Add minced garlic and red pepper flakes; cook until fragrant.
  5. Stir in shredded zucchini, salt, pepper, and half of the herbs; simmer covered for 15 minutes.
  6. Remove cover and mix in heavy cream and remaining herbs; heat through.
  7. Stir in grated Romano cheese; adjust consistency with reserved pasta water if necessary.
