  • 1 package chicken sausage
  • 2 15oz cans great northern beans, drained
  • 1 15oz can whole corn kernels, drained
  • 1 4oz can diced green chilies
  • 1 10oz can diced tomatoes with green chilies
  • 1 15oz can pure pumpkin puree
  • 4 cups chicken stock
  • 1 1/2 teaspoon ground cumin
  • 1 1/2 teaspoon chili powder
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground black pepper
  • Green onions (for garnish)
  • Cheddar cheese (for garnish)
  • Sour cream (for garnish)

Instructions

  1. Remove casings from chicken sausage and cook in a skillet over medium heat until browned (8–10 minutes). Drain excess fat.
  2. In your crockpot, combine the cooked chicken sausage, drained great northern beans, corn kernels, diced green chilies, diced tomatoes, pumpkin puree, chicken stock, cumin, chili powder, nutmeg, and black pepper. Mix well.
  3. Cover and cook on low for 6–8 hours.
  4. About 20–30 minutes before serving, microwave cream cheese until soft (30–60 seconds) and stir into the chili until fully incorporated.
