  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons canola oil
  • Zest and juice of 1 large lime
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons ground cumin
  • 1 clove garlic, chopped
  • 1 jalapeño, chopped (seeds removed for less spice)
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 large red onion

Instructions

  1. Cut chicken into bite-sized pieces and marinate in a mixture of canola oil, lime juice and zest, chili powder, cumin, garlic, jalapeño, and salt in a zip-top bag for at least 30 minutes.
  2. Preheat grill to medium-high heat.
  3. Cut bell peppers and onion into chunks; thread marinated chicken and veggies onto skewers.
  4. Grill kebabs for about 6–8 minutes until the chicken is cooked through, turning occasionally.
  5. Serve warm with fresh cilantro and additional lime juice.
