  • 4 boneless chicken thigh fillets
  • 3 tablespoons olive oil
  • 100 ml lime juice (freshly squeezed)
  • 2 tablespoons chopped cilantro
  • 2 cloves garlic (crushed)
  • 1 teaspoon brown sugar
  • 3/4 teaspoon red chili flakes
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 yellow bell pepper (sliced)
  • 1/2 red bell pepper (sliced)
  • 1/2 onion (sliced)
  • 5 cups Romaine lettuce (washed and dried)
  • 2 avocados (sliced)
  • 1 pinch cilantro (extra to garnish)
  • 1 pinch sour cream (optional – to serve)

Instructions

  1. In a shallow dish, whisk together olive oil, lime juice, cilantro, garlic, brown sugar, chili flakes, cumin, and salt.
  2. Add chicken thighs to half of the marinade. Let marinate for at least two hours in the refrigerator.
  3. Heat oil in a grill pan over medium-high heat. Grill chicken until golden brown and cooked through. Set aside to rest.
  4. Sauté sliced bell peppers and onions in the same pan until tender.
  5. Slice grilled chicken and combine with lettuce, avocados, grilled veggies, and remaining marinade. Serve chilled.
