  • 2 medium zucchinis, sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1 tsp dried Italian herbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
  2. In a large skillet over medium heat, add olive oil, sauté chopped onions and minced garlic until fragrant (about 2 minutes).
  3. Add ground turkey to the skillet; cook until browned while breaking it up with a spoon (approximately 5-6 minutes).
  4. Stir in drained diced tomatoes, Italian herbs, salt, and black pepper; simmer for 3-4 minutes.
  5. In the prepared baking dish, layer half of the sliced zucchini, half of the turkey mixture, and half of the mozzarella cheese. Repeat layers once more.
  6. Bake uncovered for 30-35 minutes until bubbly and golden on top; let cool for about 5 minutes before serving.
