  • 10 Balls fresh mozzarella (bocconcini, ciliegine, “cherry sized”)
  • 5 black olives (whole pitted, medium or large)
  • ½ Pound chicken (sliced thinly)
  • 8 ½ Ounces sun dried tomatoes (packed in oil, julienne cut)
  • flake salt (as needed)
  • 1 ½ Ounces balsamic glaze

Instructions

  1. Prepare the dressing by whisking together olive oil, torn basil leaves, and salt in a mixing bowl.
  2. For the eyeballs, slice each mozzarella ball in half horizontally. Layer a slice of chicken on one half, then top it with an olive.
  3. Drizzle with balsamic glaze for extra flavor.
  4. Arrange the assembled eyeballs on a platter and drizzle any remaining dressing over them before serving chilled.
