  • 175 g baking spread (or butter, softened, unsalted)
  • 175 g caster sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 175 g self-raising flour
  • 25 g black food coloring
  • 200 g butter (softened, unsalted)
  • 400 g icing sugar
  • 1 tsp vanilla extract
  • 12 tbsp milk
  • Green food coloring
  • Yellow food coloring
  • 150 g tinned custard mixed with green food coloring
  • Candy eyes
  • Green sprinkles

Instructions

  1. Preheat your oven to 140C Fan/325F/Gas Mark 3. Line a cupcake tin with cupcake cases.
  2. In a mixing bowl, beat together baking spread and caster sugar until fluffy. Add eggs and vanilla; mix well.
  3. Fold in self-raising flour and black food coloring until combined.
  4. Divide batter into cases and bake for 25-30 minutes. Cool completely.
  5. Create holes in the center of each cupcake and fill with custard mixed with green food coloring.
  6. For frosting, beat together softened butter, icing sugar, vanilla, and green food coloring. Frost cupcakes as desired.
  7. Decorate with candy eyes and sprinkles!
