  • 1 3/4 lb boneless, skinless chicken breast (cubed)
  • 3 cups fresh cubed pineapple
  • 1 1/2 large green peppers (diced)
  • 1 large red onion (diced)
  • For the marinade: ketchup, dark brown sugar, low-sodium soy sauce, pineapple juice, olive oil, rice vinegar, garlic, ginger, sesame oil, salt, and pepper.

Instructions

  1. In a mixing bowl, whisk together all marinade ingredients until well combined.
  2. Place the chicken in a resealable bag and pour in most of the marinade; reserve some for basting. Seal and refrigerate for at least one hour.
  3. Preheat grill to medium heat (400°F). Drizzle veggies with olive oil and season.
  4. Assemble the kebabs by threading chicken, pineapple, onion, and peppers onto skewers.
  5. Grill kebabs for five minutes; brush with reserved marinade. Turn and grill for an additional four minutes or until chicken reaches 165°F.
