  • 12 tablespoons very cold unsalted butter, diced into cubes
  • ½ cup very cold heavy cream
  • 2 large eggs, divided
  • 2 cups all-purpose flour, plus more for rolling out scones
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • ½ teaspoon kosher salt
  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend (for glaze)
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream (for glaze)
  • 1 tablespoon maple syrup
  • pinch of kosher salt

Instructions

  1. Prepare your ingredients by pulling out the butter, heavy cream, and eggs from the refrigerator.
  2. In a bowl, whisk together the heavy cream, one egg, and one egg yolk (reserve the egg white) and chill it in the freezer.
  3. Combine flour, sugar, baking powder, chai spices, and salt in a food processor; pulse until mixed.
  4. Add cold butter to the dry mixture; pulse until some pieces are small while others remain larger.
  5. Gradually add chilled cream mixture while pulsing until a slightly wet dough forms.
  6. Transfer dough to a floured surface, shape into a disc, wrap in plastic wrap, and chill for about 30 minutes.
  7. Roll out chilled dough to desired thickness and cut into wedges or strips.
  8. Preheat oven to 375°F (190°C), place scones on a lined baking sheet, brush with reserved egg white, and bake for 20-22 minutes until golden brown.
  9. For the glaze, mix powdered sugar, chai spice blend, vanilla extract, heavy cream, maple syrup, and salt until smooth.
  10. Dip baked scones into the glaze and let them set before serving.
