  • 1.5 lbs beef sirloin or flank steak
  • 3 bell peppers (red, green, yellow)
  • 1 medium onion
  • 3 cloves garlic
  • 1/3 cup soy sauce
  • 1 cup beef broth
  • 2 tablespoons brown sugar
  • Salt and black pepper to taste
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Optional: 1 teaspoon sesame oil

Instructions

  1. Slice the beef into thin strips and season with salt and black pepper.
  2. Layer the seasoned beef in the slow cooker, then add chopped bell peppers and sliced onion on top.
  3. In a mixing bowl, whisk together soy sauce, beef broth, minced garlic, brown sugar, and optional red pepper flakes.
  4. Pour the sauce mixture over the meat and vegetables.
  5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the beef is tender.
  6. In the last 30 minutes of cooking, mix cornstarch with cold water in a small bowl and stir into the slow cooker to thicken the sauce.
  7. Add sesame oil if desired before serving.
