  • 3 medium eggs
  • 140 grams brown sugar
  • 110 grams coconut oil
  • 170 grams pumpkin puree
  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • For the glaze: 100 grams powdered sugar
  • 2 tablespoons milk
  • 2 tablespoons maple syrup

Instructions

  1. Preheat the oven to 175°C (350°F). Grease and flour a small springform pan (20-22 cm).
  2. In a bowl, beat the eggs with the brown sugar until frothy. Mix in the coconut oil, pumpkin puree, and optional maple syrup.
  3. In another bowl, combine the flour, baking powder, and pumpkin spice. Gradually mix the dry ingredients into the wet ingredients until just combined.
  4. Pour the batter into the prepared springform pan and bake for about 25 minutes. Cover and bake for an additional 20 minutes or until a toothpick inserted comes out with moist crumbs.
  5. Allow to cool completely before glazing. For the glaze, mix powdered sugar with milk and maple syrup until smooth and drizzle over cooled cake.
