  • 2 medium zucchini (cubed)
  • 1 onion (cut into ¾-inch pieces)
  • 1 bell pepper (cut into ¾-inch pieces)
  • 4 fully cooked sausages (sliced into circles)
  • 2 ½ tbsp olive oil
  • ¼ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp onion powder
  • ¼ tsp pepper
  • ½ tsp salt
  • 1 tsp garlic (minced)

Instructions

  1. Heat 1 tbsp of olive oil in a skillet over medium-high heat.
  2. Add the sliced sausage and sauté until browned. Remove from the pan and set aside.
  3. In the same skillet, reduce heat to medium and add the remaining olive oil along with zucchini, onion, and bell pepper.
  4. Season with garlic powder, oregano, basil, onion powder, pepper, and salt; stir well.
  5. Cook until onions are translucent and vegetables are tender (about 5 minutes).
  6. Return the sausage to the skillet along with minced garlic; mix everything well. Cover for a few minutes to meld flavors.
