  • 2 small zucchini (thinly sliced)
  • 1 small yellow onion (finely diced)
  • 1 pound small button mushrooms (cleaned)
  • 34 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 3 tablespoons butter (divided)
  • Salt and black pepper (to taste)
  • Fresh parsley and grated parmesan for garnish

Instructions

  1. Heat olive oil and ½ tablespoon butter in a large skillet over medium-high heat.
  2. Add zucchini slices, season with salt and pepper, and sauté for 3-4 minutes until tender. Remove from skillet.
  3. In the same skillet, melt remaining butter; add onions and cook for about 2 minutes until softened.
  4. Stir in mushrooms and cook for 5-7 minutes until browned.
  5. Add garlic and herbs; cook for 20 seconds until fragrant.
  6. Return zucchini to the skillet; mix well and heat through for another minute.
  7. Pour in vegetable broth; cook for 2 minutes while adjusting seasoning to taste.
  8. Serve garnished with chopped parsley and grated parmesan.
