  • 1 medium onion, diced
  • 1 medium red bell pepper, chopped
  • 34 garlic cloves, minced
  • 1 ½ cups white rice (uncooked)
  • 1 ¼ cups vegetable broth
  • 1 ¼ cups salsa
  • 1 (15 oz) can kidney beans, drained and rinsed

Instructions

  1. Soak the rice in cold water for at least 10 minutes; drain.
  2. In a large skillet over medium heat, heat oil and sauté onion and bell pepper for about 3 minutes. Add minced garlic and spices; cook for an additional minute.
  3. Stir in soaked rice, salsa, and vegetable broth. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 15–20 minutes without lifting the lid.
  5. After cooking, let sit covered for a few minutes before gently stirring in kidney beans.
