  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup green or brown lentils, rinsed
  • 6 cups vegetable broth
  • 1 can (15 oz) butter beans, drained and rinsed
  • 4 cups fresh spinach, chopped
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp ground turmeric
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté diced onion for 5-7 minutes until soft; add minced garlic and cook for another minute.
  3. Add rinsed lentils and vegetable broth along with ground cumin, smoked paprika, and turmeric.
  4. Bring to a boil, reduce heat to low, and simmer for 20-25 minutes until lentils are tender.
  5. Stir in butter beans and chopped spinach; simmer for an additional 5 minutes until spinach wilts.
  6. Season with salt and pepper to taste before serving hot.
