  • ½ cup softened butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ cup granulated sugar (for topping)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and mashed sweet potatoes until combined.
  4. In another bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet mixture until just combined. Pour into the prepared loaf pan.
  6. Mix topping ingredients (sugar and cinnamon) in a small bowl; sprinkle over the batter.
  7. Bake for 55–65 minutes or until a toothpick inserted comes out clean. Cool before slicing.
