  • 1/4 cup flour (or almond flour)
  • 2 tablespoons green onions (finely chopped)
  • 2 tablespoons cooked turkey bacon crumbles (optional)
  • Oil for frying
  • Salt, pepper, onion powder, oregano

Instructions

  1. Peel and shred the sweet potato using a grater or food processor. Rinse under cold water to remove excess starch.
  2. Squeeze out moisture from the shredded sweet potatoes using cheesecloth or paper towels.
  3. In a bowl, mix together the egg and green onions, then combine with the sweet potatoes. Add flour, seasonings, and optional turkey bacon; mix well.
  4. Heat oil in a skillet over medium heat. Spoon the mixture into the skillet, shaping into fritters.
  5. Cook each fritter for 3–4 minutes per side until golden brown. Serve warm.
