  • 1/2 teaspoon ground cumin

  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 2 ripe avocados
  • 1 lime, juiced
  • 2 tablespoons chopped fresh cilantro
  • 1 cup diced tomato
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1/2 cup sour cream

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss cubed sweet potatoes with olive oil, paprika, cumin, salt, and pepper; roast for 25-30 minutes until golden.
  3. In a skillet over medium heat, brown the ground beef; drain excess fat and mix in taco seasoning.
  4. In a bowl, mash avocados with lime juice and cilantro for guacamole.
  5. Prepare pico de gallo by mixing diced tomatoes, red onion, cilantro, and lime juice.
  6. Assemble your bowls with layers of roasted sweet potatoes, ground beef, guacamole, pico de gallo, and top with sour cream.
