  • 1 package (8 ounces) Monterey Jack cheese, shredded
  • ½ cup mayonnaise
  • 4 large flour tortillas (10-inch)
  • 1 pound leftover turkey (sliced)
  • 12 ounces leftover stuffing
  • ½ cup whole berry cranberry sauce
  • Fresh sage, chopped

Instructions

  1. In a medium bowl, mix shredded Monterey Jack cheese with mayonnaise and chopped sage until well combined.
  2. On each tortilla, spread an even layer of the cheese mixture. Add slices of turkey, stuffing, and cranberry sauce on one half of the tortilla before folding it over.
  3. Heat a non-stick skillet over medium heat. Cook each folded quesadilla for 1-2 minutes on each side until golden brown.
  4. For the dipping sauce, combine additional cranberry sauce with mayonnaise and sage in a separate bowl.
  5. Slice the quesadillas in half and serve warm with the creamy dipping sauce.
