  • 3 Persian cucumbers (thinly sliced)
  • ½ cup fresh dill (finely chopped)
  • 1 tbsp capers
  • ¼ red onion (thinly sliced)
  • 2 tbsp tahini
  • ½ lemon (juiced)
  • 1 tbsp nutritional yeast
  • 1 tsp Dijon mustard
  • 1 tbsp white apple vinegar
  • 1 tbsp maple syrup
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • salt and pepper (to taste)
  • water (if needed, to thin)

Instructions

  1. In a mixing bowl, combine butter beans, sliced cucumbers, dill, capers, and red onion.
  2. In a jar with a lid, mix tahini, lemon juice, nutritional yeast, Dijon mustard, apple vinegar, maple syrup, garlic powder, and onion powder. Shake well to emulsify; add water if needed for consistency.
