  • 2 cups chopped rotisserie chicken
  • 2 tbsp olive oil
  • 2 apples (peeled, roughly chopped)
  • 1 white onion (peeled & roughly diced)
  • 4 tbsp butter
  • 1/4 cup flour
  • 2 1/2 cups chicken broth
  • 3/4 cup half & half
  • 2 cans cannellini beans (drained)
  • 2 cups shredded Mexican blend cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped apples and onions along with chili powder and cumin. Cook for 6-8 minutes until softened, then set aside.
  2. Lower heat and melt butter in the same pot. Whisk in flour and cook for about 60 seconds.
  3. Gradually add chicken broth while whisking until smooth. Then add half & half and simmer until thickened (3-5 minutes).
  4. Stir in the cooked chicken, drained beans, and apple-onion mixture.
  5. Adjust consistency with extra broth if needed, then mix in shredded cheese until melted.
  6. Serve hot with desired toppings.
