  • 2 tbsp olive oil
  • 1 cup beef broth
  • 68 pepperoncini peppers
  • 4 tbsp ghee
  • 1 tbsp dried chives
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp dried dill
  • 1 tsp salt
  • 1 tsp black pepper
  • 12 tbsp pepperoncini pepper juice

Instructions

  1. Pat the beef chuck roast dry and season generously with salt and black pepper.
  2. In a large skillet, heat olive oil over medium-high heat and sear the roast for 1-2 minutes per side until golden brown. Transfer to a slow cooker.
  3. Deglaze the skillet with beef broth, scraping up browned bits. Pour over the roast.
  4. Sprinkle spices and arrange whole pepperoncini around the meat. Top with ghee.
  5. Cover and cook on low for 8-10 hours or high for 5-6 hours until fork-tender.
