  • 1 cup shredded zucchini (drained)
  • 1 clove garlic (grated)
  • 1/3 cup bread crumbs
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1 large egg
  • Fresh herbs: chives, parsley, basil, oregano
  • Salt and pepper

Instructions

  1. Preheat your oven to 400˚F and lightly coat a baking sheet with olive oil.
  2. Grate the zucchini into a clean towel, twist to drain excess moisture.
  3. Grate the garlic and combine it with drained zucchini in a mixing bowl.
  4. Add egg, breadcrumbs, cheese, chopped herbs, salt, and pepper; mix thoroughly.
  5. Shape the mixture into small balls and place them on the baking sheet.
  6. Bake for 15-18 minutes until golden brown; serve warm with marinara sauce.
